I rarely bake with chocolate but I felt inspired by my favourite baker, Manuela Kjeilen, to create a set of irresistible chocolate cupcakes.
Since receiving my beautiful new pink Kitchenaid mixer for my birthday, I have felt even more inspired to bake and I have been testing out new recipes.
I decided to use the chocolate cupcake recipe from her book, Love, Maneula as my guide but there are also many similar recipes on her official website.
Manuela even has her own app!
The cupcakes are so moist and fluffy – the perfect treat to accompany a cup of tea.
I decided to make mine with a twist by adding a chocolate ganache filling to replicate my favourite Charbonnel et Walker Pink Champagne Truffles.
The chocolate has a marc de champagne filling but my cupcakes are alcohol free. Nevertheless, you still have the dreamy ganache centre which is to die for! To finish, I added a swirl of my signature vanilla bean frosting.
