My dearest pretty pumpkins! I must apologise for my infrequent posts over the last few months. At the start of October I returned to University and so I have been quite overwhelmed with an array of classes, deadlines and assignments (two of which I submitted this week!) Nevertheless, back in September I captured a few of the sweet autumnal treats and recipes which I have been longing to share with you and also some of my favourite Halloween traditions for the spookiest day of the year!
I think Autumn has to be one of my favourite seasons for baking ~ there is a wondrous array of spices, seasonal fruits and flavours to choose from and I thought I would share a selection of the cosy treats I have made over the past few weeks.
A Cosy Crumble
The first, and maybe the most tantalising dessert of all, is of course, apple crumble! We used to have an apple tree in our garden and it was one of my favourite seasonal traditions to pick up any of the fallen apples and use them for a crumble! They’re so simple to create with scrumptious results. Sophie’s top tip: for that added autumnal flavour, add a sprinkling of cinnamon and mixed spice to the crumble topping and bake separately before combining with the apples to make that classic crunch!
Sweet Cinnamon Buns
Whilst Autumn is most definitely about returning to the classically cosy, comforting bakes, it is also about trying something new! This season I finally decided to make my very first set of cinnamon buns.
I had refrained from making these delightful, fluffy buns because I thought they would be rather challenging. Nevertheless, they were completely worth the effort and a true delight! Sophie’s top tip: be patient, allowing the dough to rise for a good 4-5 hours, in a cool, dry place and remember to glaze with a glossy icing!
Pink Pumpkin Cupcakes
Taking the pumpkin spice into the realm of cupcakes, this year I decided to combine my classic vanilla cupcake recipe with the seasonal flavours of cinnamon, nutmeg and ginger to create cupcakes which mirror the signature Starbucks pumpkin spice latte.
I also had so much fun creating mini pink fondant pumpkins to crown each swirl of frosting! Sophie’s top tip: sprinkle your frosting with cinnamon for that extra piece of spice…
This year I haven’t found the time to complete my usual Autumnal pumpkin DIYS but I still have the ones which I decorated last year to gaze at ~
I selected two ceramic pumpkins from Hobbycraft and decided to adorn them with dainty pearls and miniature bows for an added girly touch! I used the Pebeo acrylic paint in ‘Powder Pink for the pumpkins featured.
You will need to paint two layers of paint on each pumpkin but you must wait until the first layer is dry before applying a second coat.
For the stalks I used a shimmery silver shade which adds a whimsical fairytale touch (very reminiscent of Cinderella’s carriage.) Once your pumpkins are dry you can start adding the decorations you desire!
